قال الدكتور عبد الرحمن شمس خبير التغذية أن القلي من أكثر طرق الطهي شيوعًا في المطابخ العالمية، ولكنه يحمل في طياته العديد من المخاطر الصحية إذا لم يتم التعامل مع الزيت بطريقة صحيحة.
من أهم الأسئلة التي تطرحها ربات المنازل: كم مرة يمكن استخدام الزيت للقلي دون التأثير على الصحة؟ الإجابة على هذا السؤال تعتمد على عوامل متعددة، منها نوع الزيت وطريقة القلي ودرجة الحرارة.

كم مرة نستخدم الزيت للقلي؟ نصائح لتجنب الأخطار الصحية فى السطور التالي.عند استخدام الزيت للقلي، تتعرض مكوناته الكيميائية لتغيرات كبيرة نتيجة الحرارة العالية. إذا تم تسخين الزيت لمرات متكررة، فإنه ينتج مواد ضارة مثل الأكريلاميد والألدهيدات، التي ترتبط بزيادة مخاطر الإصابة بالأمراض المزمنة مثل السرطان وأمراض القلب.
القاعدة العامة
زيوت القلي العميق: يمكن استخدامها من مرتين إلى ثلاث مرات كحد أقصى، بشرط تصفيتها بعد كل استخدام وعدم ترك بقايا الطعام داخل الزيت.
الزيوت النباتية الصحية (مثل زيت الزيتون): يُفضل عدم إعادة استخدامها للقلي، لأنها تتحلل بسرعة عند تعرضها للحرارة العالية.
زيت جوز الهند: يتحمل درجات الحرارة العالية ويمكن استخدامه للقلي لمرات أكثر من الزيوت الأخرى.
علامات تلف الزيت
تغير لونه إلى الداكن.
ظهور رائحة قوية أو نفاذة.
تكوين رغوة على سطح الزيت أثناء القلي.
نصائح لتقليل المخاطر
استخدم زيوتًا ذات نقطة دخان عالية مثل زيت الكانولا أو زيت الأفوكادو.
لا تخلط بين الزيت القديم والجديد.
تجنب القلي العميق قدر الإمكان واستبدله بطرق طهي أخرى مثل الشواء أو الخبز.
الاستخدام الصحيح للزيت أثناء القلي يمكن أن يقلل من المخاطر الصحية المحتملة. انتبه لجودة الزيت وعدد مرات استخدامه، وتذكر أن اختيار زيوت صحية واتباع التعليمات الصحيحة يضمن لك ولعائلتك طعامًا لذيذًا وآمنًا.
